Because of the growth of the Lemp family's brewery which began in 1840, William Lemp built the giant Lemp Brewery in 1864 spanning five city blocks. Below it was a large, natural cave system used to keep the beer at just the right temperature. Not long after, Lemp was known as the largest brewery in St. Louis. By the turn of the century, the Lemp family's fortune began to dwindle until the Lemp Brewery was closed by the Prohibition in 1919.
