Fresh are delicious...

...but they have a tough, leathery skin around each bean that is a bit tedious to remove

So I them; 3 minutes in salted water (about as salty as seawater) then into a bowl of
ice-water for a minute or two until the skin can be easily pinched off

Sans skin, the beans can be eaten as-is, sauteed, added to a salad or a sauce, etc. Delicious!
