I wonder if the recipe for Manchurian Ravioli was passed down from Marco Polo?

In chinese, it means "King of dumplings in manchuria" Hope that clears something up!

It helps explain the food better, but I still wonder why the owners thought "ravioli" was a good translation for "dumplings"?

Ravioli is pretty much the only word they can use in French. This is in Montreal, so the title is in French and Dumpling is not french. The literal translation for Dumpling is quenelle but I think that is very French and not so Quebecois.
